The Secret To Perfectly Grilled Tofu

https://veryveganrecipes.com/wp-content/uploads/2015/08/how-to-grill-tofu-1024x535.png

Of all the things vegans cook, I get the most questions about tofu. It can seem so complicated to prepare if you do not know how. And I have learned that even experienced vegans still cook some pretty sub par tofu. Most vegans I meet think the secret is in a great marinade. And it’s true that this is important, but it’s certainly not the most important.

Nothing is better than grilled food and grilled tofu is no exception. You can make something so amazing that it completely stands on it’s own as the featured part of your entree. It’s so delicious that even non vegans will enjoy eating it. But you must know the secrets to preparing perfectly grilled tofu. It’s not like this is something impossible to do, most people just have never been taught. I think every vegan on the planet would be happier if they knew how to make amazing tofu.

Get ready to wow yourself and your friends with some amazing grilled tofu. Get ready to fire up the BBQ and get the 5 easy steps to perfection on the next page.

I have learned that the very first mistake people make is getting the wrong kind of tofu and cutting it wrong.

https://veryveganrecipes.com/wp-content/uploads/2015/08/vegan-pizza-papa-johns-dominos-pizza-hut-little-caesars-1024x535.png

Everyone I know except my ex, which may explain why we are not together, loves pizza! Especially vegan pizza.

Most vegans choose to just make their pizza at home. For a long time I assumed that any pizza from Papa Johns, Dominos, Pizza Hut, or Little Caesars would not be vegan. As it turns out this isn’t true at all. You can get vegan pizza from all of these pizza chains.

Pizza Hut Veggie Lovers Pizza This is a simple, straight from the menu vegan meal. Just make sure they don

Pizza Hut Veggie Lovers Pizza

Listen, I understand the ethical reasons to not support a pizza chain. I get it. But our website caters to everyone from ethical vegans to newbies on a plant based diet. And we try to help everyone enjoy eating vegan. It is out belief that the easier it is to do, the more people will do it and stick with it. And that means less animals killed or abused. And in our opinion that is a win. If you have a different opinion I completely understand. Just keep the hate messages to yourself? We are doing what we think is best for the animals and for vegans of all stripes here.

If you are a person who is getting excited about ordering a pizza like a normal person and having it delivered to you deliciously hot and vegan, then go to the next page below. You will learn how to order vegan pizza from all of these popular pizza restaurant chains.

papa johns vegan pizza

Papa Johns is my favorite of all pizza chains so I’m going to start there. I don’t order pizza anymore. I just don’t support the chain. And that is why I am happy to help others learn how to order vegan from these restaurants. Because I know where I was and where I am now. It’s a path and a process. And the easier the life is, the longer you will stay with it. And the longer you stay with it the more you will learn and move away from things you used to do. So if you are at a stage where you want to eat a vegan Papa Johns pizza, I support it!

The original hand tossed pizza dough is vegan and so is their sauce. This means you can start with those two and custom build any pizza you want. Any of their veggie toppings are fair game so load it up!

Papa Johns also have a veggie lovers pizza right on the menu. So you can order it if you like. But remember to request NO CHEESE.

papa johns garlic sauce

The best thing from Papa Johns? Their garlic dipping sauce. It is amazing and vegan! You will think it’s butter but it isn’t. So by all means get that and kick up the flavor!

On the next page, vegan Dominos

dominos vegan pizza

Dominos pizza is a huge pizza chain with locations everywhere. And you can get a vegan pizza delivered to your door, no problem!

The regular pizza sauce is vegan and so is their thin crust. But it’s important to note that it is the only crust that is vegan. So order the thing crust with regular pizza sauce and pile on the veggies!

dominos dipping sauce

And just like at Papa Johns, the various dipping sauces are vegan. The Garlic, BBQ, and Buffalo sauce are all vegan.

You can order vegan at Pizza Hut, that’s on the next page

pizza hut vegan pizza

Pizza Hut may be the oldest of the pizza chains. It’s been around forever. I never liked it in my town because they don’t deliver. But many people do love their Pizza Hut!

The Pizza Hut “Thin N Crispy” and “Hand Tossed” crusts are both vegan. Others are not. So start there as your pizza base.

Their sauce is vegan and of course the veggies are. So pile it up high with veggie toppings and enjoy!

Little Caesars is on the next page. They offer something that is vegan that none of the others offer.

little caesars vegan pizza

I have never eaten at Little Caesars. But I didn’t send several emails over the past 2 weeks to their corporate office to determine exactly what is vegan. I was pleasantly surprised!

The regular crust and regular sauce are both vegan. So you can start from there and pile on the veggies like normal.

crazy bread

The one thing Little Caesars offers that others don’t is a vegan breadstick option. If you special order their crazy bread without the parmesan cheese, and get the crazy sauce on the side for dipping, you can enjoy them as long as your little vegan heart desires!

Fried Tofu Sandwich

https://veryveganrecipes.com/wp-content/uploads/2015/08/Vegan-Fried-Tofu-Sandwich-1024x535.png

The inspiration for this fried tofu sandwich comes from many places. Primarily it’s for my brother who insist on some kind of fried sandwich for breakfast, lunch and dinner. I swear he could eat some version of a fried sandwich three times a day. Of course there is no meat cooked in my house so I needed a delicious substitute.

The truth is that my brother gets his craving for a fried breakfast sandwich from my mom who had a fried pork chop sandwich at least three days a week. This meant that us kids had the same thing a lot of mornings. Hers was loaded up with friend porkchop, dripping in grease and topped with mayo, lettuce, tomato and cheese.

My version is a lot healthier and less cruel. This beautiful vegan fried breakfast sandwich is still crispy and delicious. I’ve never had any complaints about it yet. You only need three ingredients to get started. Get the recipe on the next page.

You can make this great alternative to ‘meat sandwiches’ very quickly and easily.

½ Block of extra firm Tofu

2 tbsp Soy Sauce

¼ cup Nutritional Yeast

Toppings for the sandwich as you desire

Press the tofu to remove any extra water. 1/2 block of tofu will make 2 sandwiches.

Heat a well oiled frying pan on the stove to medium.

Put the soy sauce and nutritional yeast into two separate small bowls

Slice the tofu into 1/2 inch pieces. Coat both sides well in soy sauce, then move to Nutritional yeast bowl and coat well.

Fry for 2 to 3 minutes on each side.

I like to server on toasted bread with vegan mayo, spinach and fresh tomato.

I have many vegan friends who crave the texture and flavor of fried chicken. But they really want vegan fried chicken. Personally I don’t really crave most meats like chicken and others. I’d much rather have some delicious fresh vegetables.

I found this recipe and cooked it for a party I was having at my home. I knew there would be vegans and meat eaters there and this seemed like the perfect compromise. I need to warn you right now, this recipe makes fried ‘chicken’ so realistic it may actually bother some vegans. The secret is in the way the skin is duplicated.

The look, the texture and the taste is so spot on you would swear you were eating an authentic southern fried chicken recipe. You can take this and add some potato salad and coleslaw and be the MVP of any southern picnic. Get this incredibly realistic vegan fried chicken recipe on the next page.

I was browsing for recipe ideas a couple of days ago when I came across this idea of vegan taco bowls.

The way I actually found these recipes is because I was searching for vegan recipes I could cook using our George Foreman grill. We bought this thing many years ago and it just doesn’t get used. I was cleaning out cabinet space and there is was, looking lonely and rejected.

Before I decided whether to get rid of it or keep it I wanted to see if there were any great vegan recipes that were based on using this thing. I turned to my trusty friend Google and began searching. I found a few ideas and then I found the most beautiful looking taco bowls I had ever seen. They were made by grilling veggies and other things on the George Foreman grill!

Of course you don’t have to own one of those grills to make these amazing recipes. You can just use your stove like normal. But do try them. They are so easy and delicious! There are a few different recipe ideas for these taco bowls on the next page.

Tofu Stir Fry Rice

https://veryveganrecipes.com/wp-content/uploads/2015/08/vegan-tofu-stir-fry-rice-1024x535.png

There are so many vegan Asian dishes I love. This tofu stir fry rice is definitely one of my favorites.

The vegan recipes is amazing for many reasons. You can dress it up or down. It cam be as complicated as you want or as easy as you want. The simplest thing to do is just make the rice which is amazing. You can add the veggies in the recipe or add even more to your liking. The tofu is also optional which is handy on days you are in more of a hurry. And the sauce in the recipe, which is simply incredible, can also be substituted with soy sauce or your favorite Asian sauce for a quicker recipe.

This recipe is so versatile you can 100% make it your own. Find out how to make this amazing Tofu Stir Fry Rice on the next page.

(adapted from this recipe by Simple Vegan)

Ingredients

⅔ cup basmati rice (135 g)

9.7 oz firm tofu (275 g)

Soy sauce to taste

¼ cup julienned pepper (35 g)

¼ cup julienned green pepper (30 g)

¼ cup julienned onion (30 g)

¼ cup julienned zucchini (35g)

¼ cup bean sprouts (25 g)

¼ cup corn (35 g)

¼ cup broccoli (20 g)

The sauce: (In a hurry? Just use soy sauce or your favorite Asian sauce)

1 tablespoon extra virgin olive oil

2 cloves of garlic (chopped)

⅛ teaspoon cayenne powder

1 tablespoon coconut sugar

2 tablespoons balsamic vinegar

½ cup soy sauce

¼ cup water

1 tablespoon cornstarch

Preparation

Cook the rice according to package directions. I recommend you to cook it the day before.

I usually cook tofu in the oven because you don’t need to add oil, you only have to bake it on a baking sheet with baking paper at 180 ºC or 355 ºF for 30 minutes (15 minutes each side). You can also cook the tofu in a fryer or a pan with oil until golden brown.

Add soy sauce in a pan and cook the tofu for a couple of minutes over high or medium-high heat.

Heat water in a wok (or a pan) and when it’s boiling add the veggies. Let the veggies cook for about 5 minutes.

To make the sauce you only have to saute the minced garlic cloves in a saucepan until golden. Add the cayenne powder, sugar, vinegar and soy sauce and cook for at least 5 minutes. Mix the water and the cornstarch in a cup and add this mixture to thicken the sauce. When it’s thick, it’s ready.

Pour the sauce in a wok and when it’s hot, add the veggies, the tofu and the rice and cook for a couple of minutes or until the rice is hot.

This soft serve vegan ice cream is my new favorite. We have posted 11 vegan ice cream recipes this summer and out of them all, this one wins hands down.

The texture is nearly indistinguishable from regular ice cream when you make it right. I mean it is probably the closest thing I have ever seen. It’s almost like you opened up your own vegan dairy queen in your home when you serve this delicious treat.

It only takes 25 minutes from the time you start until the time you are putting a spoonful of cold, delicious chocolate vegan ice cream in your mouth. If you really want to test it, make some for the kids but don’t mention it’s vegan. They won’t know the difference and it will definitely get the picky kid seal of approval! And you’ll be happy knowing they didn’t eat any unhealthy dairy products.

Ingredients

¾ cup Cashews

1½ cups Water

¼ teaspoon Xanthan Gum

½ teaspoon Instant Espresso

2 Tablespoons Cocoa Powder

¼ teaspoon Salt

1 teaspoon Vanilla Extract

1 cup Coconut Cream

½ cup Coconut Milk

½ cup Cane Sugar

6 oz Dark Chocolate (Vegan)

2 Tablespoons Cornstarch

Instructions

In a blender, combine Cashews, Water, Xanthan Gum, Instant Espresso, Ccocoa Powder, Salt, Vanilla Extract, Coconut Cream and Coconut Milk. Blend on high till everything is nice and smooth.

Pour out all of this mixture into a saucepan, leaving 1 cup of it behind.

To the filled saucepan, add Sugar and Dark Chocolate. Stir over low heat until chocolate and sugar have fully melted and mixture is warm.

To the remaining 1 cup of liquid, whisk in Cornstarch till dissolved. Gradually stream this mixture into the saucepan whilst whisking non stop. Once everything has been incorporated, whisk away until the mixture comes to a soft boil. This is to cook out the cornstarch and thicken the mix. But, remember to whisk whisk whisk so no lumps form!

Once it has come to a soft boil, turn heat off and transfer mixture into a bowl or measuring cup. Cover with cling film and make sure to press it against the surface of the mixture so a skin does not form.

Cool to room temperature and then churn in ice cream maker. Alternatively, if you do not have an ice cream maker, follow steps for manual churning mentioned in my post.

Once out of the ice cream maker, place in an airtight ice cream or tupperware box, cover, and freeze to allow it to further firm up. Photo: John Hritz

Sometimes we take for granted that everyone can eat nuts. That is why I’m happy to post this vegan queso dip that is nut-free. I get so many messages from vegans who will like one of the recipes I post but they can’t eat it because they are allergic to nuts. Good news, you can totally enjoy this recipe because it is 100% nut-free.

Minimalist Baker is the mad genius behind this delicious recipe. We tweaked it a little to our liking. If you have been looking for a queso dip that is creamy, savory, cheesy, vegan and free of nuts then you will love this one. The secret to make it happen is from the least likely ingredient ever. I would have never in a million years thought you could use it to make a cheesy vegan queso dip.

Find out what that secret ingredient is and how to make this amazing vegan queso dip recipe on the next page below.

(adapted from this recipe by the Minimalist Baker)

Ingredients

7-9 rounds of eggplant, sliced 1/4-inch thick

Olive oil

Sea salt

1 1/2 to 2 cups unsweetened original almond milk

3 Tbsp nutritional yeast

1/4 tsp finely minced fresh garlic

1 tsp cumin

1 tsp chili powder

2 tsp cornstarch (optional for thickening | sub another thickener if desired)

1/4 cup chunky medium salsa, slightly drained (OR 1/4 10-ounce can of Rotel original diced tomatoes and green chilies)

Smoked paprika

Optional: hot sauce to kick it up a notch

Instructions

Slice your eggplant into round slices just under 1/2 inch

Sprinkle sea salt on both sides and arrange in a colander to draw out the bitterness for 15 mins. Rinse with cool water and pat dry using clean towels

Preheat oven to high broil and place an oven rack near the top of the oven. Arrange the dried eggplant rounds on a baking sheet lightly spritzed with non-stick spray and drizzle both sides of the eggplant with a little olive oil. Sprinkle with a very small amount of salt.

Broil on high for 4-5 minutes on each side, watching carefully as to not let them burn. Flip at the halfway point to ensure even cooking. Once the eggplant appears tender and both sides have golden brown color, remove from the oven and wrap loosely in foil to steam.

After a few minutes, unwrap and peel the eggplant skin away. It should come right off. If you pack your roasted eggplant into a 1-cup measuring cup, it will be almost 1 cup.

Place eggplant in a blender with the 1.5 cups (to start) almond milk, 2 Tbsp nutritional yeast, minced garlic, cumin, chili powder and cornstarch and blend on high until smooth and creamy. Taste and adjust seasonings as needed. I added a pinch more sea salt and a little more nutritional yeast. To thin, add more almond milk.

Transfer to a small saucepan and warm over medium to medium heat until slightly thickened and bubbly – about 5 minutes. The longer you go the thicker it will become.

NOTE: If it isn’t looking as thick as you want, thicken with a slurry of cornstarch by adding an additional 1 tsp cornstarch to a small bowl with a little almond milk and 2-3 Tbsp of the cheese mixture. Whisk to combine and then stir back into the pot. This should thicken it right up.

Once hot and thickened, remove from heat and stir in DRAINED salsa or Rotel. Don’t put the liquid in or it will make it runny. Pour into a serving dish and top with a little smoked paprika and hot sauce for flavor/color.

Serve with chips, crackers or veggies. Keep warm in a mini crockpot or over a tea light warmer if you have one. Microwaves well.

Dip will change colors after it has been out a while. Don’t worry, it is still good!

Can refrigerate for up to 2 days and reheat in sauce pan. Photo: Rambling Dream

Define Vegan vs Plant Based Diet: Stop the Hate

Can we talk seriously about veganism and plant based diets for just a minute? I think this is very important. http://bit.ly/1MunWpo

Define Vegan vs Plant Based Diet

https://veryveganrecipes.com/wp-content/uploads/2015/08/vegan-and-plant-based-diet-1024x679.jpg

I get asked all the time to define vegan and compare it to a plant based diet. Many are confused and think they are the same thing. Others know the difference well and can be mean about it. I think anyone pursuing a vegan or plant based diet is a good thing and good for the animals. Although we have a detailed page explaining veganism located here, I thought an article on this subject was needed based on the questions I have been getting recently.

Vegan weight loss is one of the benefits of a plant based diet

Vegan weight loss is one of the benefits of a plant based diet

Definition of Vegan

A vegan is someone who follows a certain philosophy and this is where many people get confused. You can be on a vegan diet and not be vegan. I know that sounds counter intuitive but it is true. You can only make vegan recipes at home and never eat any animal products and still not be a vegan. Veganism is a philosophy that says you will not support anything that brings any harm or death to animals.

This means vegans do not wear fur, leather, support businesses that harm animals and more. This is also one of the reasons you see comments get so heated on my articles on how to eat vegan at fast food restaurants. The one on Taco Bell is here and it is the most popular of the entire series. But I caught a lot of flack from vegans who said I was supporting the meat industry. Technically they are right. But I think teaching people how to eat there and not order any animal products will shape Taco Bells business. It will change them over time. And I think that is a small victory worth pursuing.

Many plant based eaters will do a vegan detox or just go all plant based for a week or 21 days and tell everyone they are vegan. And this is why you will see many long-time vegans get upset at the label. You can’t embrace a philosophy for a week or 21 days. It has to change you forever.

Cooking easy vegan recipes is the same for vegans or those on a plant based diet

Cooking easy vegan recipes is the same for vegans or those on a plant based diet

Plant based diet

Most ‘vegans’ I encounter are actually people who eat a plant based diet. They haven’t bought into the philosophy of veganism yet. Many are still struggling with animal violence. Others are moving closer to being vegans with time. This is why I never say anything negative about someone on a plant based diet. In my experience a lot of those people wind up embracing veganism 100%. Some even become pretty vocal vegan activist. I know for me I started out as just a plant based eater. But a deeper change happened over time.

If you ask me what do vegans eat I’d have to say the same thing those on a plant based diet eat. And that is why this issue is confusing for some. The diet is the same. What is different is philosophy of animals outside of the food.

Colleen Patrick Goudreou helps define vegan in this great video.

You could go on a 100% tofu diet and still not be vegan. If you were wearing a fur coat while shopping for a leather jacket and belt while eating the tofu sandwich you would definitely not be vegan.

Can vegans and plant based dieters coexist? I sure hope so. Both are saving animals. I support those on a plant based diet just as much as I support vegans. It’s all about the animals to me. I enjoy the health benefits and the way I feel. Those are great side effects of being vegan. But nothing compares with the feeling of knowing somewhere there is animal alive because you chose to not eat animal products. And that is a feeling both vegans and the plant based diet crowd can share.

Sweet Potato and Bok Choy Salad

This Sweet Potato Salad in just genius. Created by Kathy at Blogher, it is a thing of beauty!

This vegan salad features sweet, savory maple tempeh, combined with incredible Bok Choy (or your favorite green). Caramelized onions kicks up the flavor a few notches and a ton of diced sweet potato makes it hearty and filling. And of course there is the sauce. Did I forget to mention the sauce? Simply incredible.

We added a little twist to this delicious vegan recipe that makes it just perfect. You can make it in advance so you will know there is a full meal waiting on you later, or you can prepare it and eat it right now. Get this incredible vegan salad recipe on the next page below.

(Adapted from this recipe at lunchboxbunch)

Ingredients

Tempeh:

8oz temeph, sliced into bite size pieces

2 Tablespoons maple syrup

1 1/2 Tablespoons Tamari

1  sweet potato, diced into cubes and boiled

5 Cups of raw organic Bok Choy (Or green of your choice)

1 onion, sliced thin

1 Tablespoon Just Mayo (or vegan mayo of your choice)

2 Tablespoons nutritional yeast

Juice of one lemon

2 teaspoons extra virgin olive oil

The sauce, for drizzling and eating!

1 Tablespoon Just Mayo

1 teaspoon hot sauce

1 teaspoon maple syrup

Optional and recommended

smoked paprika and cayenne on tempeh to taste

Instructions

Slice the tempeh and add it to a medium bowl along with the maple syrup and tamari. Toss well and let sit for at least a half hour before cooking so the flavors can absorb and marinate the tempeh.

Boil the diced sweet potato until tender but not mushy. Turn off heat. Before draining the hot water, add the bok choy to the pot and close lid. Let the water and heat wilt the bok choy.

Drain bok choy and potato and pour them into a large mixing bowl. Spoon in the vegenaise, sprinkle in nutritional yeast and squeeze in lemon juice. Gently toss with a large spoon or spatula. Set bowl aside.

Warm a skillet over high heat and add 2-3 tsp of EVOO to the pan. When oil is hot, add the tempeh, including any leftover juices from the marinade that didn’t get absorbed.) Saute for five minutes, flipping mid way through. When tempeh is done, sprinkle smoky paprika and cayenne over top to taste, then pour tempeh over top the sweet potato bok choy mixture. Gently fold it in.

Warm the skillet again and add the onions. No need to add additional oil, since the residual juices and oil are enough to let the onions brown and caramelize a bit. (But add oil or water if the pan is too dry.) Cook the onions until gently caramelized. Pour the onion in the large mixing bowl as well. Toss everything gently and pour into a large shallow serving bowl.

Whip together the drizzle sauce and drizzle over top.

Eat immediately or refrigerate to heat up later. Will keep 2 days. Photo: Alpha

Island Flavor Chickpea Salad

https://veryveganrecipes.com/wp-content/uploads/2015/08/vegan-chickpea-salad-mediterranean-style-1024x535.png

You will fall in love with this chickpea salad recipe with a twist. I have nicknamed it the Island Flavor Chickpea Salad.

I think because at the time I am writing this blog post it is summer, that is why I have been eating a lot of light salads and sandwiches. It is so hot and muggy in the summer and light vegan foods seem to settle better. Of course that is one of the great joys of being vegan. So many light, crisp and refreshing foods to enjoy. Recently I posted a recipe for a great vegan ‘tuna’ salad and it was hugely popular. You can get that vegan tuna recipe here.

This easy vegan chickpea salad is perfect for sandwiches, in wraps, or as a stand alone meal! Get the amazing recipe on the next page below.

Island Flavor Chickpea Salad

(This recipe is adapted from this original recipe by Oh My Veggies)

Ingredients

1 can chickpeas, drained and rinsed

1  can black olives, drained and coarsely chopped

1  can artichoke hearts, drained and coarsely chopped

(all of the above should be 15 oz cans)

2 roasted red bell peppers, seeded and coarsely chopped

1/2 cup pesto (or less to taste. You may start out less and keep adding until you like it)

Salt and black pepper, to taste

Instructions

In a large bowl, coarsely mash the chickpeas using a potato masher. You want about half to be really well mashed, but the rest can be coarsely mashed or even whole.

Toss the chickpeas with the black olives, artichoke hearts, and roasted red peppers. Stir in the pesto, according to taste. Season to taste with salt and black pepper.

How To Order Vegan At McDonald"s

https://veryveganrecipes.com/wp-content/uploads/2015/08/Mcdonalds-vegan-menu-options-1024x535.png

Our vegan fast food series continues with McDonald’s. My first recommendation is don’t eat at McDonalds. But for some that’s not practical. I am one of those people.

I have mentioned this in comments on other articles in this series when I was being attacked by extreme vegan purist. My nephew, who I love more than anything, WILL be having his birthday at McDonald’s. He has for the past 2 years and probably will for the next couple of years. This is a family occasion filled with laughs, moments and lot’s of love. It usually last about 90 minutes to two hours. And you can bet that I will be there. No matter what.

So for many of us the best answer is to find the best possible solution to a complicated situation. You can eat vegan at McDonald’s but don’t expect a great meal. You can’t even eat the best tasting thing they serve. Their french fries. No, McDonald’s french fries are not vegan. So what can you eat at McDonald’s? The good news is that they are moving towards serving breakfast all day. And some of their best vegan options are breakfast. That really helps the selection for vegans.

Find out how to order vegan at McDonald’s on the next page below.

McDonald’s serves a lot of salads. Unfortunately on their small side salad is vegan. Below are the options you can add to it to get the best salad experience.

How To Order Vegan At Ruby Tuesday

https://veryveganrecipes.com/wp-content/uploads/2015/08/vegan-ruby-tuesday-menu-1024x535.png

Our vegan fast food series continues with a restaurant that isn’t really fast food. But it was requested by a reader so we decided to put together a vegan menu at Ruby Tuesday.

This wasn’t a difficult task for me because I probably eat at Ruby Tuesday as much as any restaurant. There aren’t many vegan dining options where I live so I tend to pick places with great salad bars and they have a good one.

The big question is if there is anything else other than salad to eat there. The good news is there are a few things but really you should plan on the salad being the biggest part of your meal. And remember all salad bars aren’t created equal. I have seen bigger selections at other restaurants but at Ruby Tuesday it always seems to be fresh and crisp.

Want to know everything you can eat from the menu at Ruby Tuesday’s? Get our vegan meal plan on the next page.

Salad Bar

ruby tuesday vegan salad bar

Ruby Tuesday has a pretty decent salad bar. Of course nearly half of it is cheeses and meats so there will be a lot of it you can’t eat as a vegan. But you can load it up and have a nice meal using nothing but the vegan options. Load that plate up with all of the vegan ingredients you like and then ask for lemon or choose the balsamic vinaigrette dressing.

There are a couple hearty sides that come hot and delicious you can choose. Check them out on the next page.

Baked Potato and Steamed Vegetables

vegan baked potato steamed vegetables

If you get the baked potato without any butter or sour cream along with your salad you really start to see a decent meal develop. No, it isn’t a vegan diners paradise but you will be satisfied and happily vegan. Add on the steamed vegetables and you really have a hearty dish. Make sure they know that you do not want butter! It never hurts to repeat it a couple of times.

If you enjoy pasta then the last menu item on the list may be your favorite. Get it on the next page.

Spaghetti Squash Marinara

Vegan Spaghetti Squash Marinara

Pasta lovers can get a pretty good dish straight from the menu. If you have this dish along with the salad bar you can eat until the button on your jeans pop! Just make sure you tell them you want the spaghetti squash marinara with NO parmesan cheese. The marinara is actually pretty delicious and I love the spaghetti squash.

If you want something to drink you will basically be limited to unsweetened tea or water.

If I have left something off the list please feel free to comment and share!

The plight of the tuna is just heartbreaking. It’s also not safe for anyone to eat. But this vegan tuna salad sandwich will excite your taste buds and embrace your compassion. Food doesn’t have the be bland or boring in veganism and this amazing vegan creation proves it.

I really love this recipe because you can make a sandwich from it but you can also just enjoy the tuna salad alone, with crackers or other ways. This recipe is really full on flavor. If you like vegan recipes that excite your taste buds this one will not disappoint. With celery, onion, garlic paprika, ground mustard and dill you your mouth will not be bored!

Nectarine, Plum, Kale Salad

https://veryveganrecipes.com/wp-content/uploads/2015/08/Nectarine-Plum-Kale-Salad-1024x535.png

Ok, this should officially be named the salad of the summer. This vegan salad features Kale, Plums and nectarines!

The thing I love about salads is they can either be hearty and filling or light and crisp. Salads like this one are perfect for summer because they are light and crisp. This combination is perfect for the hot summer weather. Of course you can eat this delicious salad any time of the year. No matter when you find this recipe, you should try it immediately.

The crisp Kale, Sweet juicy Nectarines and plums, mixed with just a hint of sweetness from the maple for texture makes this salad come alive on your tongue. You can toss it together rather quickly and it’s perfect to take to work and keep in the fridge for later.

1/2 teaspoon dried mustard

Salt to taste

Place kale, nectarine, plums and almonds in a salad bowl.

In a small bowl, whisk together all the dressing ingredients until well-blended. Pour over the salad and toss well to combine. Check for seasoning. Serve at room temperature. Serves 4.

How To Order Vegan At Wendy"s

https://veryveganrecipes.com/wp-content/uploads/2015/08/how-or-order-vegan-at-wendys-1024x535.png

We are continuing our very popular, yet controversial, series on how to eat vegan at fast food restaurants.

After our last article, How to eat vegan at Taco Bell, I received over 20 complaint messages and lost over 100 Facebook fans. That is a lot of negative response. The problem with only looking at the negative vegans who messaged me is you have to compare it to the positive response. That was my most popular article in 3 weeks and I picked up over 400 new fans from that one post. Clearly most vegans like learning how to survive in the fast food jungle!

I have to travel a lot so I often find myself stranded in fast food hell. I also have a lot of friends and family that insist on going to eat at fast food restaurants and I like to spend quality time with those I love. One of the main reasons some people struggle with veganism is the alienation and isolation. Of course you can compensate for this by meeting new vegan friends. But you can’t replace your family. Sometimes compromises have to be made.

So with all of that being said, let’s look at how to order vegan at Wendy’s. Continued on the next page below.

Garden Side Salad

wendys side salad

Most fast food restaurants have a side salad and Wendy’s is no exception. It’s not the largest salad ever but it will get the job done. And unlike a lot of fast food places you get more than one vegan dressing to choose from. You can have their Fat Free Ranch, Italian Vinaigrette, or the Pomegranate Vinaigrette Dressing. Note, the latter is not available at all stores.

There are a few things you can add into the salad or request more of to bulk it up. Those include apple slices, red onion and tomato.

On the next page the heartiest vegan menu item at Wendy’s

Plain Baked Potato

wendys baked potato

I think Wendy’s is the only fast food chain to carry the baked potato. If you are a starch solution vegan then this is right up your alley. It’s definitely more filling than just a salad and if you get both it’s not a bad meal. Of course you can’t get the butter or sour cream that typically comes with it. I love ranch so I either just eat it plain with my salad or I cover it in their Fat Free Ranch dressing.

Of course you can also add a bun to your meals for some added carbs and energy if you like.

There are several vegan drink options at Wendy’s as well so you aren’t stuck with only water. I’ll run down that list for you on the next page.

Vegan Drink Choices

Juicy Juice Apple Juice

All Natural Lemonade

Hi-C Flashin’ Fruit Punch

Minute Maid Light Lemonade

Nestea Sweetened Iced Tea
Nestea Unsweetened Iced Tea
Nestle Pure Life Bottled Water

Wild Berry Lemonade

Water

Some vegans consume sugar and some don’t. So keep that in mind when choosing the sweetened drinks. Those would not be considered vegan for non sugar eaters. The drinks without any processed sugar are in bold.
