I love fajitas. In fact I love almost all Mexican inspired food. It’s always delicious and it’s easy to make vegan. These vegan fajitas are no exception.


I was at a chain Mexican restaurant last week and ordered their vegan fajitas. I was so happy when they loaded my plate up with black beans. In the past when I have ordered fajitas vegan I usually get extra veggies but nothing to really make up for the lost protein. That’s one of the reasons I love fajitas, they are so hearty and filling.


I decided to come up with a vegan fajita dish worthy of my taste buds and my veracious appetite! Luckily I didn’t have to do the work on my own. I was lucky enough to find this recipe from simple veganista. I love that blog and highly recommend it!


You can make these with soft flour tortillas in the traditional sense or mix it up and make them as tacos with nice crunchy corn taco shells. The secret is in the black bean preparation and the guacamole. You can have fun with this recipe and everyone will love it. Even omnivores. Get the recipe on the next page below.



Fajitas With Black Beans and Guacamole


(adapted from this recipe from Simple Veganista)


Ingredients


2 cans (15 oz.) black beans, drained and rinsed (about 3 cups)

1 red bell pepper, cored and sliced

1 yellow bell pepper, cored and sliced

1 green bell pepper, cored and sliced

1 small white onion, sliced

1 tablespoon grapeseed or olive oil or 3 tablespoon water (for water saute)

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/4 – 1/2 teaspoon chipotle or cayenne powder, optional

1/2 teaspoon mineral salt

corn or flour tortillas

1/4 head of cabbage, shredded (optional), to serve

lime wedges, to serve


Guacamole


2 – 3 avocados

1 small jalapeno, most seeds removed and diced

1/4 red onion, diced

small handful cherry tomatoes, quartered or 1 small tomato, diced

1/2 teaspoon mineral salt, or to taste

few sprigs cilantro leaves, diced

1 lime, squeezed


Scoop avocado flesh into a large bowl. Cut it into chunks with a fork. Using the fork, mash up about half of the avocado. Add diced jalapeno, onion, tomatoes, mineral salt and lime juice. Mix to incorporate. Add in chopped cilantro and mix again gently.


You can stir fry your fajita filling in oil or water, of course water is healthier. Heat in a skillet over medium/high heat. Add bell peppers, onions, and spices, cook for about 3 minutes, stirring occasionally. Add black beans and cook until heated through, about 3 more minutes. Adjust seasoning to taste adding anything extra you like.


Warm your tortillas. You can do this over an open stove flame, in a pan, in the oven or even the microwave. Do whatever you like best.

If I’ve learned anything from running this website it’s that you can never have to many recipes for vegan cheese. Every cheese recipe I have posted has quickly gone to the top of hits for recipes on my site. The all time leader is this vegan cheese sauce recipe if you’d like to go check it out.


I have a feeling this cheese sauce recipe may become the new reigning champion of cheeses though. It comes to us courtesy of Jennifers Kitchen and it’s really amazing. According to her “this cheesy sauce is trans-fat-free, cholesterol free, lactose & casein free, soy-free, and gluten-free.  And it’s a good source of fiber so it’s great for weight loss. It also dishes up protein, vitamins A and K, magnesium, copper, selenium, and manganese, and gets its color and an added nutrient boost from raw carrots.


I think the secret to this vegan cheese sauce being so rich and savory is the coconut oil which is something I have never seen used in a cheese sauce before. It’s perfect for nachos, chips, pouring over broccoli and more. If you can’t wait to try this delicious recipe out you can get it on the next page below.



Healthy Vegan Cheese Sauce


(adapted from this recipe from Jennifers Kitchen)


Ingredients


3 cups water – divided

1/3 cup raw cashews

1/2 cup sliced raw carrots (3/8 cup shredded carrots)

2 1/2 teaspoons granulated onion

1/4 teaspoon granulated garlic

2 teaspoons salt

1 tablespoon lemon juice

1 tablespoon tahini

1/4 cup olive oil or mild (unscented) coconut oil

3 tablespoons tapioca starch or corn starch


Instructions


Place 1 cup water and next 7 ingredients (cashews through tahini) in blender and blend until very, very smooth. (A high-powered blender works best for this.)


Add oil and blend well.


Add tapioca starch or corn starch. Blend until well mixed.


Pour into medium/large sauce pan. Rinse blender with remaining 2 cups water and add to sauce pan.


Bring to boil over medium/high heat, stirring constantly, until mixture is thick and bubbly.


Remove from heat.


Serve warm or chilled.

Garlic, Black Pepper and Cinnamon Recall: Salmonella

A grocery store chain has recalled four of it’s spices due to Salmonella contamination.


The affected spices are Garlic, Black Pepper, and Cinnamon. Since our readership is vegan it may not be affected by the fourth contaminated spice seasoning: Bac’n Buds (although I do believe it is vegan). This is a very serious threat, please don’t take it lightly!


According to foodsafety.gov


“Salmonella, the name of a group of bacteria, is one of the most common causes of food poisoning in the United States. Usually, symptoms last 4-7 days and most people get better without treatment. But, Salmonella can cause more serious illness in older adults, infants, and persons with chronic diseases. Symptoms include Diarrhea, fever, abdominal cramps, vomiting.”


These spices were sold at Kroger food stores. However these spices were sold at stores by different names. They include Kroger, Ralphs, Food 4 Less, Foods Co., Fred Meyer, Fry’s, King Soopers, City Market, Smith’s, Dillons, Baker’s, Gerbes, Jay C, Ruler Foods, Pay Less, Owen’s, and Scott’s. The Food and Drug Administration said Kroger is recalling its ground cinnamon, garlic powder, coarse ground black pepper and Bac’n Buds.


The FDA said a sample of garlic powder tested was found to be contaminated with Salmonella.

I never get tired of trying new vegan ice cream recipes and I’m glad I found this one from Produce on Parade!


This incredible vegan ice cream starts out like many of them do, with a frozen banana base. But it gets really interesting from there with just the right amount of spiced rum to take it to a whole new level! Besides the great flavor that is added by included the rum in this recipe, it also serves to give this vegan ice cream a nice soft serve consistency. It’s a very creative vegan recipe to say the least and I am happy I found it.

Living With An Omnivore: How I Make It Work

I get a lot of private messages on my Facebook page every day. Most of them are about going vegan, cheese cravings and how to help others. But the question I get asked more than any other is how to be vegan and live with an omnivore. More specifically, how to be happy living with an omnivore. Many vegans are nervous about getting into a serious relationship with someone who isn’t a vegan and especially about marrying them. Can it really work?


Keep in mind that everything I am going to share in this article is mostly from my own personal experience. And I also have close friends who have gone through this so I have seen it from the outside looking in as well. The first thing you should know and be aware of is this: If you are early in the relationship and your being vegan is already causing problems then it will probably never get any better. The early stages of a relationship are when people usually go out of their way to put their best face forward. And they are also more forgiving of things that bother them early on. As time goes on they will stop holding back and just let their feelings known. If someone isn’t holding back early then they don’t even have the ability to pretend early for the sake of seeing you. They sure won’t work with you later on.


I do not want to dissuade you though. If you really like someone who is an omnivore and are somewhat reasonable about it you can probably make it work. In fact the biggest question will probably be more about you than about them. Will you be happy being with someone who eats animals one year from now? How about five years from now. For a lot of vegans this is really hard because their compassion and ethical base is so strong. So you should first make sure you can be happy in this situation before you even start trying to worry about your partner. There are basically 5 questions you need to ask yourself. How you answer these questions will guide you on how to proceed.


Get the 5 questions you need to answer before getting serious with an omnivore. And how to make it work once you both decide it’s worth it. Continued on the next page below.



Do you really want to get serious with an omnivore? Start out by asking these 5 questions.


1. Am I effected strongly when I watch someone eating meat?


2. Does it affect me emotionally to the point of feeling sad, depressed or angry to watch someone eating meat?


3. If the answer to 1 and 2 are yes, how likely is it that these feelings will get even stronger as time goes on?


4. Do I feel strongly compelled to try and get this person to change every time I see them eating meat?


5. If so, is that compulsion so strong I can’t hold it back right now? And if I can now, does it get harder as time goes by?


Depending on how you answered those questions you should now know if you should even bother trying to have a serious relationship with an omnivore. Let’s be honest, it’s one thing to go out on dates a few times a week and tolerate someones actions. But living with them or getting married to them means it will happen every single day. Several times a day. And you will not be able to walk away from it.


If you have decided you can be fine with your partner eating meat then you have to come up with a plan for minimizing any issues that come up daily. If you have some rules set and you both agree to them it can be very easy. But laying the groundwork and getting a firm commitment from both people is vitally important! You must have that first!


I will tell you what has worked for me and how you can use it or adapt it to fit your situation. Continued on the next page.



I have been in a serious relationship with an omnivore for about 2 years now. It was pretty easy in the beginning but we did hit some complicated times once we started spending a lot of time together. Luckily the issues we had seemed to be small and worth trying to work past. So we talked about it and came up with a few ground rules. These worked when we were just dating, going out to eat several times to eat and things like that. And it was very simple.


1. He agreed that he would never insist that we go to a restaurant that did not have ample vegan options for me. It didn’t have to be a vegan restaurant but they did have to offer more than water and a side salad as their vegan options.


2. He agreed we would never eat at a fast food restaurant that wasn’t on my approved list. There were only two so it was an easy list to remember. Chipotle and Taco Bell.


3. I agreed that I would never try to force him to go vegan and I would never try to make him feel bad for being an omnivore.


4. We both agreed that when we were at each others house that some simple rules would be followed. At my house there would never be any meat in my house or any meal. But I would cook foods that he loved that were vegan. And we experimented a lot to determine what those foods were. At his house he promised that when he cooked that I would enjoy the meal if I left the meat out. So that meant plenty of veggies and fruits. And he promised to never cook any veggies in the same container or same place as meat.


As our relationship got more serious we decided to move in together. This meant our existing rules would have to be improved upon and amended. Some things change when you are staying in the same house. We have made it work with just a couple of modifications. I’ll share those with you on the next page below.



The whole process became easier when he decided moving in with me would be best. It was closer to his job and my place was nicer so it was an easy decision. It also made implementing the ground rules easier since my house was set up vegan to begin with. We added a few simple rules about food.


1. He was given a section of the pantry to keep anything he liked to eat.


2. He was given a section of the fridge for his meat, cheese, butter etc. It was a small portion, but since everything else he would eat is the same things I eat then really we share the rest easily.


3. I only prepare vegan food. If he wants something non-vegan he has to prepare it himself, even on days I cook.


4. If he is preparing dinner then he has to abide by the same cooking rules as when he lived in his own place. Cook whatever he wants but I must have a full vegan meal when the meat part of it is excluded. And everything prepared separately.


It seems like a lot of rules and restrictions but we both wanted it to work and he was really willing to basically put it in writing and stick to it. Any partner worth having will be willing to set up some rules and stick with them. So how has it worked for the last year and a half living together?


It’s been great. And since eating and cooking meat is a separate process he just opts to eat vegan most of the time. In fact I predict he will probably go vegan in the next year or two. He recognized that he feels better, is leaner and happier when he eats mostly vegan. So without complaining or judging I think I am moving him vegan. And he has been great with me from the very beginning. You can live in harmony with an omnivore but you must start setting the rules early on in the relationship. And you need to adapt them as your situation changes.

30 Things Every Vegan Pantry And Fridge Must Have

The longer you are vegan the better you learn what every vegan pantry must have. These are vegan staples that you will use a lot. There are also certain things you should keep in your refrigerator. Of course it’s impossible to tell you specifically what you need because our tastes may be different. So you may add a few things I don’t to your vegan kitchen and vice versa.


Just like every house has a solid foundations so does a vegan diet. For the purposes of this article I will be talking about a mostly whole food vegan diet. My list of essential items will not include faux meats or cheeses. You can certainly include those things if you like but I do not feel that they are essential.


I have broken my vegan ingredients for your kitchen into several categories. They are Beans, Grains, Dried Fruits, Nuts, Refrigerated, Condiments, Vegetables and other. The great thing about this basic list is that every vegan can use it, and most of the things will keep for long periods of time. So you will always have what you need on hand to make delicious vegan meals.

Beans


Beans and peas will be used in so many different vegan dishes. You should always have these in the pantry. Dried beans keep forever and even canned beans serve a purpose. Below are the bare minimums you should have.


Canned Chickpeas: These are used for so many things. Sandwich spreads like “chicken salad“, the brine is used to make creamy whipped cream, salads and so much more!


Kidney Beans for vegan chili


Black Beans for soups, stews and mexican dishes


Lentils: So many awesome vegan recipes start with dried lentils


Refried Beans for Mexican dishes

Grains


Whole grains are good for you in moderation. They are an easy way to add energy to vegan meals.


Oats: Use steel cut rolled oats. You can use them for amazing breakfasts and other dishes.


Quinoa: An amazing source of protein and it’s uses in recipes are limitless.


Pasta: I prefer corn pasta but you can choose what you like best. Just remember to limit the pasta in your dishes and make the vegetables be the featured ingredient.


Dried Fruits


I like to always have raising, dates, and cranberries on hand. I use them as snacks, in vegan puddings, in my salads, oatmeal and more. They add a great energy boost to a lot of meals!


Nuts


You can add nuts to salads, soups, stir fries, as a garnish or alone as a snack. They kick up the protein in a dish and add energy. Keep them in your freezer for longer life!

Non Dairy Milk


There are so many to choose from you can have more than one on hand. I like Soy milk, Almond milk, Cashew milk, Coconut milk and Hemp milk. There are so many things I use these vegan milks for. Smoothies, to drink with my occasional desserts, in your oatmeal, and a host of other vegan recipes.


Condiments


I always have these basics in stock


Tahini, Mustard, Liquid Aminos, Vegan Mayo, Nut butters.

Vegetables and Other


Tofu: Tofu is used in so many things. From cheeses, sauces, ‘eggs’, ‘meat’, and a host of other vegan recipes. It is the vegan miracle food!


Kale, Spinach and other greens: You can never have too many of these or eat too many of these.


Carrots, Onions, Celery: Used in so many vegan recipes or as snacks!


Eggplant, Avocado, Mushrooms, Herbs: This is a mixed up list of random items but I use them all of the time!

On our last post, How to Eat Vegan At Taco Bell, we had a lot of comments asking for us to do a complete breakdown of the Chipotle menu options for vegans. I think most everyone knows that they introduced their very popular Sofritas last year that have been a big hit with vegans. But there are a lot of other great vegan options from Chipotle. They were also the first national chain to go GMO free so a lot of vegans and clean eaters like that as well.


So what vegan fast food items can you order from the Chipotle menu? We have the entire menu options on the next page.

I think nearly every vegan knows about the Sofritas! They are vegan and amazing. In fact the week they debuted is our city it was hard for them to keep up with demand! You can order them straight from the menu and enjoy!

Taco’s


The rules for taco’s are pretty much the same for any Mexican restaurant and they apply here as well. They have made it easy to order at Chipotle. Just ask for the vegetarian taco without any cheese or sour cream. No complicated instructions require and they will fix you right up!

The same rule applies to ordering a burrito at Chipotle. Just ask for the vegetarian burrito without cheese or sour cream. It couldn’t be any easier!

This is my absolute favorite thing to order at Chipotle! Just order it without cheese or sour cream and you are good to go! And I’ll tell you a little secret. If I know in advance that I’m going to Chipotle I will bring a little container of tofrutti sour cream in my purse. That’s my person vegan pro tip!

We are continuing our series on how to eat vegan at various fast food restaurants. The response so far has been amazing. These are some of our most popular articles ever. But we are also getting rude and hateful comments about how no self respecting vegan would eat at a fast food place. Or they will say something like “but what about GMO?” it’s still garbage food!


It’s sad that I have to repeat this in every article. No one is recommending vegans eat at fast food restaurants. Not ever once have we done that. But most of us live in the real world. Some of us travel. A LOT! If you stay in your same little town and never go anywhere it’s probably real easy for you. If you have told all of your family that no matter what, if they want to eat with you it has to be at a vegan restaurant, good for you! But most of us don’t live in that world. Sometimes we would like to accompany our families to a meal and the really want to go to Hardees. We can lose time with our family, or we can comprise. Personally, I love my family. So I occasionally compromise.


Now that I have gotten the the long and annoying disclaimer out of the way I want to say thank you to everyone who has been supportive and thanked me for trying to make their lives easier. The main thing you can eat at these restaurants is just like every other fast food place. Salad. The side salad at Hardees / Carls Jr is decent and can be vegan if you order it the right way. You must order it without any cheese. And you want to get the low fat Italian dressing, or just not eat any dressing.

The following options will really depend on where you are at. For instance most Hardees serve grits but many Carls Jr do not serve grits. I think both of them all serve the Texas toast. So it will greatly depend on where you are in the country as to how many of these items are available to you.

I have been vegan a long time and have seen lots of vegan recipes. But this recipe for vegan eggs sunny side up blew my mind!

The thing I hear most from people trying to go vegan is that it’s hard to give up two things. Cheese and eggs. Of course it’s very easy to make a delicious tofu scramble that might even be better than scrambled eggs. And we have a lot of egg substitutions for baking that make it easy to keep it vegan. But having fried eggs like eggs over easy or eggs sunny side up has been challenging.

This recipe will blow your mind! I know it did mine. You really can enjoy a traditional breakfast with eggs sunny side up and it be completely vegan! Get the recipe for vegan eggs on the next page.



Vegan Eggs – Sunny Side Up


This egg appeared on One Green Planet courtesy of Mouth Watering Vegan. You should definitely check out both sites and I highly recommend the vegan cookbook by Mouth Watering Vegan.


Ingredients


For the Egg Yolk


2 heaped Tbsp vegan dried instant mashed potatoes, dehydrated flakes or powder.

7 Tbsp  (105 mL) hot water (may need a tiny bit more)

1 tsp nutritional yeast

¼ tsp turmeric

¼ tsp kala namak salt, otherwise known as black salt – it has a sulphuric “egg” flavor, so is essential for this recipe

¾ tsp egg replacer

1 tsp vegan margarine

1 tsp sunflower or canola oil (not olive oil, as that would alter the taste)


For the Egg White


12.3 oz pack of firm silken tofu

2 Tbsp vegan mayonnaise

I have always loved chocolate. And I’m not alone. Chocolate recipes comprise the majority of all recipes online.


When I went vegan I really thought I would have to give up chocolate. Slowly over time I was able to find more and more vegan chocolate recipes. An interesting tidbit of information for my fellow vegan chocolate lovers. Some forms of chocolate are actually good for you. These mainly come in the form of dark chocolate or bitter chocolate. We are continuing our series on how to eat fast food as a vegan. Today’s article is vegan menu items at KFC.


Every time we do one of these articles we get lit up in the comments about how supporting fast food restaurants are bad, the food is still garbage even if it is vegan, and how no self respecting vegan would ever eat at these places. We get it. Believe me.


But not everyone lives in your perfect fantasy world. Some people would really like to be able to go out to eat with their friends or families sometimes. Some people travel a lot and only have fast food as an option sometimes. There are a million reasons someone may want or need to eat at a fast food restaurant. So please save your judgements for someone else. If this article doesn’t apply to you then just skip it and move on. It will be helpful for other people.

KFC has stated many times when asked, and on their website, that their fries are vegan. They are cooked in separate cookers than the chicken and are cooked in vegetable oil. Since I don’t know anyone who doesn’t like fries, this is good news!


If you’d like to have something other than fries you are in luck. There are some vegetable options for you on the next page.

The green beans on the KFC menu are vegan as is, straight from the menu. Having eat them several times I can tell you they are not amazing by any means, but they are vegan and will add something to your meal besides fries.

The corn on the cob from KFC is vegan as long as you make sure to order it without butter! Make sure they understand this when you order and you should be ok. And the corn is actually pretty good. It’s definitely better than the green beans.  But if you order them both you will get a decent mix of vegetables for your vegan meal.

Of course there is always the salad option. You can get the house salad from KFC and feel confident that it is vegan. You just have to make sure you order it without dressing, or with the Golden Italian Light Dressing. It is the only vegan option for dressing at KFC.


Sure, KFC is way down at the bottom of my list of places I want to eat. But if you find yourself there and can’t help it, at least you know there are a few vegan options for you.

There are many ways to make vegan sandwiches and burgers today and very few of them are healthy. But what if you could make one that was not only healthy, but delicious and extremely satisfying?


The folks over at the simple kitchen may have just created this perfect vegan sandwich masterpiece. Fresh, light, tasty and fully of delicious and healthy ingredients. The ingredients are so common you can get them almost anywhere so you can make this sandwich no matter where you are. And we think all of those things makes it perfect!

The Perfect Vegan Sandwich

Ingredients


4 slices of bread

¼ cup hummus

½ thinly sliced avocado

½ sliced cucumber

1 Sliced tomato

1 Tbsp olive oil, divided

Dash of salt

Dash of lemon pepper

Handful of lettuce, spinach or arugula


Instructions


Lightly toast the bread


Layer up the main ingredients on two slices of bread


Drizzle some olive oil and add salt and pepper to taste


Put a nice layer of greens on top


Cover with remaining bread

Quorn Meat-Free Beef Steaks Recall!

If you are someone who enjoys the Quorn product line of meatless products you will want to check your inventory for this recall.


Quorn issued a recall for several batches of its meat-free beef steaks. They cited the wrong product being packaged could have serious allergic reaction consequences based of a variety of ingredients that are allergens to a significant portion of the populations.


From the food.gov website:


Quorn has recalled two batches of its Chef’s Selection Meat Free Beef Steaks because the wrong product has been packaged. The presence of wheat (gluten), barley (gluten) and milk is therefore not mentioned on the label. This makes the product a possible health risk for anyone with an allergy or intolerance to wheat gluten, barley gluten and milk.


The presence of milk is especially a concern for vegans who may have thought they were purchasing a vegan product because milk is not listed in the ingredients on the package.
