These Vegan Pumpkin Peanut Butter Cups may be the best use of pumpkin that I’ve ever seen. Of course I may be partial to that opinion because I think peanut butter cups are the best candy ever. I remember as a kid watching those “you got your chocolate in my peanut butter” commercials and drooling! They were the best.
I have to give Chocolate Covered Katie credit for coming up with the brilliant idea to infuse peanut butter cups with pumpkin. I mean, chocolate, peanut butter and pumpkin don’t immediately jump out at you as being the perfect blend for candy. You will be surprised though. You may also be interested to know this recipe only requires 6 ingredients! My favorite vegan recipes are the ones that are as simple as possible and deliver in a big way. This is definitely one of those recipes.
