One of the major changes that happened when I went vegan was I begin to eat more coconut. There are a ton of ways coconut just makes ordinary dishes come alive and taste amazing.
Before adopting this healthy, cruelty free lifestyle the only coconut I ever ate was in a cake like German Chocolate cake or other coconut cake recipes. Now I enjoy fresh coconut occasionally, drink coconut water often, and use it in a variety of recipes. I was looking for some new coconut recipes this week and found three that are amazing. I’m making the second one tonight! You can find all 3 of these recipes on the next page.
Coconut and Turmeric Roast Potatoes
Turns out, coconut flour makes a delicious coating on roast potatoes. Who knew?? These potatoes make a fantastic and healthier option if you’re craving a breaded french fry on the side of your meal. As an added bonus to being vegan they are also gluten free!

Tofu is likely the most popular vegan meat substitute known by everyone. For one, it is readily available in several grocery stores and diners. I could remember that as a college student, there was this one particular dining place that include vegan recipes in their menu. They weren’t a vegan restaurant but they would substitute tofu for several of their dishes. As a poor vegan student this made it much easier for me to dine out on occasion and I was thankful for it!
To those who aren’t familiar with tofu, it is actually made from soy beans, specifically soy milk. It is then pressed and curdled before being formed into soft white blocks.
It is my love of tofu based meals and my fond college memories of those meals in my favorite restaurant than inspired me to find this collection. Enjoy these 5 delicious tofu recipes on the next page. Number 1 and Number 4 are meals I prepare often.

Sometimes, having the extra weight poses health risks such as cardiovascular diseases, diabetes and other metabolic syndrome illnesses. However, it does not mean that all of those who have extra mass will develop health complications. Just to be on the safe side, it is better to maintain weight that is within the normal range of BMI which is 20 to 25.
For most, the difficulty with maintaining weight is due to the food being eaten. I had a cousin who, despite her efforts through exercising daily, still did not achieve the weight that she was aiming for because of her eating habits. Then she subscribed to a particular meal plan and stuck with it for some time and after several months, she was able to trim down. My cousin needed to lose weight because according to the doctors, she was predisposed to type 2 diabetes and if she remained as is, the illness would develop fully.
Vegans who eat mostly whole foods have the lowest risk of weight issues or health concerns. But there many ‘junk food’ vegans who may benefit from having healthier structured meals planned out for them. The 5 meals on the next page are perfect for that.

The recipe is four basic stages: the dough, the compote, the crumble, and then putting it all together and baking. All said, these are very easy and quick to put together. But because you need to let the dough chill for an hour, then cut the round galette bases and chill those for another 30 minutes, plan on spending some time in the kitchen for these. But trust me, they’re worth it!!

This is delectable! I am so proud of myself because I haven’t used chocolate in a recipe for a few times now. This is all fruit, all the time. the color of chocolate desserts gets boring after a while because it’s always brown… ya know? When I first started blogging about the vegan lifestyle and sharing vegan recipes I learned a couple of things. One of them was that even vegans love their chocolate! In fact, I would say vegans especially love their chocolate.
This doesn’t apply to every vegan of course. There are many who are only raw food vegans. I try to eat mostly whole foods and then indulge myself occasionally. I think this is what works best for me.
