Mexican inspired food, how do I Love thee? Let me count the ways. Vegan 7 layer dip is simply amazing
I have mentioned this a million times on the website and Facebook page. I really love Mexican food. I did even before I went vegan. But since I have made the transition to vegan I find it to be one of the most flavorful options out there. Most Mexican dishes can be made vegan with just a few minor changes. And they don’t lose their passion or flavor in the process.
This easy vegan recipe is perfect if you are entertaining, for the kids or just to pig out in front of a movie. We love this so much at our house. The kids request it several times a week. Of course I don’t make it that often, even if I like it as much as they do. Variety is the spice of life they say!

Vegan 7 Layer Dip
(inspired by a recipe from Brand New Vegan)
Ingredients
15oz can Fat Free Refried Beans
15oz can Low Sodium Black Beans, drained and rinsed
¼ teaspoon cumin
1-2 cups of this amazing Vegan Cheese Sauce
2 large Avocados
2-3 cloves garlic, minced
3-4 green onions, chopped
1-2 tablespoons lime juice
cilantro
salt to taste
2 Large ripe tomatoes, chopped
½ red onion, chopped
½ to 1 whole jalapeño, minced
1-2 tablespoons lime juice
shredded lettuce
small can black olives, sliced
your favorite salsa
Instructions
Prepare cheese sauce
Cook beans and cumin in a frying pan until it starts to bubble
Smash avocados, green onions, garlic, lime juice, and cilantro together for guacamole
Prepare Pico de Gallo by mixing tomatoes, onion, jalapeño, lime juice, and cilantro together
Spread bean mixture in bowl or baking dish
Layer on cheese, guacamole, pico de galla
Top with shredded lettuce, black olives, and salsa
