I have a younger cousin who would make a sour face every time I mention raw food. For many people, I know that they have this prejudice and revolted expression because the very idea of eating food that is not cooked is ghastly.

However, I try to turn their preconditioned minds and opinion about raw food by preparing savory vegan raw food. In so far, I have been successful because after getting an initial taste, my relatives who were not into raw food was finally able to appreciate these kinds of dishes.

Not all of those I know can appreciate raw food which is why I take a more subtle approach when preparing vegan raw food for my friends. I try out different dishes to prepare for them and I tell them afterwards that they were actually eating vegan raw food. There were those who were shocked that I have somehow deceived them but later on, they said that they ate something delicious so they don’t get that mad at all. I’ve put together a list of 5 of my favorite raw vegan recipes on the next page.

Raw Chocolate Shortbread Bars

These raw chocolate shortbread bars call for a lot of lemon juice, but that’s the secret ingredient that makes the chocolate taste a bit more zingy (like chocolate cheesecake) rather than just like pure chocolate. This gives the chocolate a deeper dimension and more of an adult flavor.

Raw Mini Chocolate Cream Cakes

These chocolate cream cakes are not only healthy and easy to make, they are raw and gluten free too! Plus perfect individual serving! Raw desserts are so much fun to make and anyone can make them. No baking required. A great recipe to make with your kids too. Plus this recipe can be easily changed to your taste preference. We used pecans in crust, but any nut would work. For the filling, we used cashews as they provide the best cream. But macadamia nuts would be okay. We reduced the amount of sugar in these chocolate cream cakes, so adjust to your liking.

Green Warrior Protein Smoothie

Spending a lot of energy cooking hasn’t been my forte many days. That’s why smoothies continue to be such an important daily aspect of my diet. In 10 minutes, I can have a smoothie in hand that would just about rival the most nutritious meal around. I’ve been drinking this smoothie as a way to pack in a ton of nutrition with minimal effort. This smoothie was actually a contender for my cookbook, but I didn’t finalize the recipe in time. However, the photo of this smoothie did make it into the book. A couple of you noticed the picture and asked me for the recipe, so I’m sharing it today!

Raw Lasagna with Cashew Cheese and Broccoli Sun-Dried Tomato Pesto

I know, FINALLY something that isn’t a dessert. Sorry I have a major sweet tooth, okay. Believe it or not, I doeat things other than raw cake and chocolate in the daytime. Usually I keep it simple with fruit, juice, smoothies, salads and sometimes zuke pasta but I also like to get fancy sometimes. I’ve been wanting to make raw lasagna for you and tonight I did! It was a very quick, spontaneous, improvised recipe that ended up (thank goodness) being quite tasty.
