The original recipe is from Oh My Veggies. I adapted the ingredients to be completely vegan.
Ingredients
For the tomatoes:
2 medium firm beefsteak tomatoes, sliced 1/2-inch thick
Olive oil spray or olive oil
Salt and pepper
For the mushrooms:
1 tablespoon olive oil
2 medium portabella mushroom caps, cleaned, stemmed and sliced
Salt and pepper
For assembling:
1 pound refrigerated pizza dough
1/2 of a small red onion, thinly sliced
2 ounces of your favorite vegan cheddar cheese
4 ounces vegan mozzarella shreds
1 cup lightly packed fresh arugula
1/2 cup lightly packed fresh basil leaves
1 teaspoon fresh lemon juice
1/2 teaspoon olive oil
